didn't you have a quick sauce you did with pan seared pork chops - maybe with balsamic vinegar?
i would like to have it. and this week's menu looks yummy.

Here's my trick to pork chops...I set the oven to 500 degrees, and put my oven safe all clad pan in the oven as it heats up. I just prep the pork chops with some salt and pepper. When the oven is at 500, the pan is screaming hot, and I transfer to a high flame on the oven (careful of the handle) and add a tbls of olive oil to coat the bottom of the pan, then the pork chops, give them a quick sear (2-3 min) then flip. Return the pan to the oven and cook for 10-15 min depending on the chops. Once done...transfer the chops to a plate to rest and juice a fresh lemon and add to the pan with some salt and pepper to taste. Reduce the lemon juice by half scraping the pan down to get the good bits of pork. Finally, finish the sauce by swirling a pat of butter into the sauce then drizzling over the chops.
