Recipe: Grill Roasted Vegetables

Grill Roasted Vegetables

2 Bell Peppers (I prefer Red, Yellow, or Orange)
1 Vidalia Onion
1 Bunch of Asparagus
1 Zucchini
1 Cup Whole Garlic Cloves
4 Tbls Olive Oil
4 Tbls Balsamic Vinegar
Salt and Pepper

Slice peppers into large pieces, approx 1" x 1".
Chop onion into large pieces
Cut Asparagus into 2" pieces
Slice the zucchini lengthwise, then slice into 1/2" half moon slices

Combine all ingredients in large bowl (or 1 gal ziplock bag). Add 2 tsp. salt, and generous amount of fresh ground pepper. Let marinate for min 30 min.

On the grill using a HOT fire and a shaker basket, add the vegetables and reserve the oil and vinegar in the bowl. You do not want to dump the oil mixture onto the fire. Cook until slightly charred (10-15 min) then return to the bowl with the oil and vinegar. Cover and let stand for 5 min.

Black Bean and Corn Salad

1 Can Black Beans
1 Can Corn
1/2 Medium Red Onion (chopped fine)
3-4 Tbls Fresh Cilantro (chopped fine)
Juice of 2 Limes
2 Tbls Olive Oil
Salt and Pepper to taste

Open Black beans and rinse in colander. Drain and add to large mixing bowl.
Open corn and rinse in colander. Drain and add to large mixing bowl.
Add remaining ingredients to bowl. Mix well. Add salt and pepper taste.

Salad can be chilled or left at room temperature. If possible, make in advance to let the flavors combine.

3 cups beef stock
1 carrot, chopped
6 sprigs fresh thyme
1 bay leaf
2 pounds chuck roast, cut into 2-inch cubes
Kosher salt and freshly ground black pepper
6 tablespoons extra-virgin olive oil
1 medium onion, chopped
2 tablespoons cognac
5 tablespoons unsalted butter
1 pound mushrooms, sliced
3 cloves garlic, chopped
2 tablespoons sour cream,
plus more for garnish
1 tablespoon Dijon mustard
2 tablespoons chopped fresh parsley leaves, plus more for garnish
1 (1-pound) package wide egg noodles

Heat the beef stock with the carrot, 3 thyme sprigs, and bay leaf. Pat the beef dry and season it with salt and pepper. Heat 3 tablespoons oil in a large heavy bottomed skillet over high heat. Fry the meat in batches so that it is browned on all sides. Lower the heat to medium and return all the meat to the pot. Add the onions and cook until they are soft, about 5 minutes. Pour in the cognac and cook until the alcohol has burned off, about 5 minutes. Add the beef stock, discarding the carrot, thyme sprigs, and bay leaf. Cook, partially covered, over a very low flame for 1 1/2 to 2 hours.

In a large skillet over medium heat, melt 3 tablespoons butter in the remaining 3 tablespoons olive oil. Add the mushrooms, garlic, and remaining 3 thyme sprigs and cook until the mushrooms are browned and cooked through. Remove from heat and set aside.

When the meat is done, remove it from the heat and fold in the mushrooms, sour cream, mustard, and parsley. Taste and adjust the seasoning with salt and pepper.

Meanwhile, cook the noodles in a large pot of boiling, salted water until tender. Drain the noodles well, toss with the remaining 2 tablespoons butter, and season with salt and pepper. Serve the stroganoff over the noodles; garnish with more sour cream and chopped parsley.

1 1/2 pounds ground beef sirloin
1 tablespoon Worcestershire sauce, eyeball it
1 small onion, finely chopped
1 tablespoon steak seasoning blend (recommended: Montreal Seasoning by McCormick) or, coarse salt and pepper
Extra-virgin olive oil, 3 tablespoons, 3 turns of the pan
12 crimini or baby portobellos, sliced
12 shiitake mushrooms, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups beef stock

Combine meat, Worcestershire, onion and steak seasoning or salt and pepper. Form 4 large, oval patties, 1-inch thick.

Preheat large nonstick skillet over medium high heat. Add a tablespoon of extra-virgin olive oil and the meat patties to a hot pan. Cook meat 6 minutes on each side until meat is evenly caramelized on the outside and juices run clear. Remove meat and cover with loose tin foil to keep warm. Add 1 more turn of the pan extra-virgin olive oil and butter to the pan, then the mushrooms. Season mushrooms with salt and pepper and saute mushrooms until tender, 3 to 5 minutes.

To mushrooms, add a sprinkle of flour to the pan and cook 2 minutes more. Whisk in stock and thicken 1 minute.

Preheat oven to 375 degrees F.

Recipe: Ground Beef Stroganoff with Pasta

Serves: 8 Active Time: 30 min
• 12 oz Italian Classics Tortiglioni Pasta (Grocery Dept), cooked per pkg directions

• 1 Tbsp + 1 1/2 tsp Wegmans Pure Olive Oil, divided

• 1 lb Food You Feel Good About 85% Lean or other Ground Beef

• Salt and pepper to taste

• 1 pkg (8 oz) Food You Feel Good About Cleaned & Cut Diced Peppers & Onions

• 1 pkg (8 oz) Food You Feel Good About Cleaned & Cut Sliced Mushrooms

• 2 jars (11 oz each) Italian Classics Mushroom Marsala Sauce

• 8 Tbsp Wegmans French Onion Dip

  1. Add 1 Tbsp of olive oil to braising pan or large skillet on HIGH. Add ground beef. Brown, stirring to break up meat, about 5 min. Season to taste with salt and pepper. Drain ground beef; transfer to separate container or keep in strainer. 

  2. Add 1 1/2 tsp olive oil to pan beef was cooked in; add peppers and onions. Cook, stirring, 2-3 min on MEDIUM-HIGH until vegetables are soft, but not browned. Stir in mushrooms; season to taste with salt and pepper. Cook about 3 min or until mushrooms are soft. 

  3. Return ground beef to pan with mushroom marsala sauce; stir. Simmer on LOW 5-10 min. Add cooked pasta to ground beef mixture; stir gently to combine. 

  4. Top each serving with 1 Tbsp dip.
Chef Tip: Garnish with chopped flat-leaf parsley.
